DIRECTOR and HEAD CHEF: Spike Jefford
Spike has had many years experience in kitchens here in New Zealand and back home in England. Spike studied Culinary Arts at Bournemouth College in England and during his time there, Spike was awarded with Student of the Year. After successfully running his own pub and restaurant for thirteen years in Hampshire, England, Spike gained the coveted job of Banqueting Chef at the prestigious 5-star Norton Park Hotel in Hampshire. After immigrating to New Zealand, Spike was Head Chef at Redoubt Bar & Eatery in Matamata, earning the restaurant many awards. This included winning the Monteith's Wild Food Competition for the Waikato and Bay of Plenty. Since 2011, he has been running Tray of Plenty Catering and in 2017 welcomed his pride and joy, 'The Beast', a custom-made smoker from Texas to begin TOP BBQ.

Cheryl is the behind-the-scenes brain behind the operation. She has had many years experience in both administration and management which has recently included being a runner-up in a national award for management and customer service. Cheryl is here to make sure your event runs smoothly, she will liaise with you to make sure you are paired with the perfect menu so that your event is a success.
